Seasonal: Peach and Pudding Salad with a Mint Vinaigrette

Ingredients

The Vinaigrette

85g of fresh mint

3 tablespoons of lemon juice

75g of extra-virgin olive oil

2 of tablespoons white-wine vinegar

1 teaspoon honey

Kosher salt, season to taste

The Salad

A half a head of Iceberg lettuce

Peaches

80g of Almonds, blitz to small chunks

200g Feta cheese cut into small chunks

260g pudding cut into rings

Method

    The Vinaigrette

  1. Put all the ingredients into a jug and blitz
  2. The Salad

  3. Grill the pudding for roughly 10 or until cooked
  4. Put all the ingredients into a bowl and pour the vinaigrette over.
