Chop the butter into small cubes and put into a food proceser. Add the pecans, breadcrumbs, lemon zest,
roughly two thirds of the parmesan and some salt and pepper, then whiz everything until the mixture binds
together.
Check the cod for any bones. Lay the fillet on on a lightly oiled non-stick roasting tray, skin side down,
and season.
Spread the crust mixture in an even layer over the top of the fish. Chill for 20 minutes until the crust
feels firm.Preheat the oven to 200 degrees/gas 6.
Sprinkle the remaining parmesan over the top of the crust, then roast the cod 20-25 minutes until the crust
turns golden and crisp and the fish is just cooked.
(Optional) Toast the bread bun on the barbeque
To serve put the ketchup on the bottom of the bread buns. Put the burger on top you then add the bacon on
that and the onion on the bacon. Finish by putting the top of the bread bun onto your burger.
