Mains: Grilled Steak with Rocket

Ingredients

2 (1 inch thick) striplion steak

Half a cup of good olive oil, plus extra for brushing the steaks

Kosher salt and freshly ground black pepper

Juice of 2 fresh lemons

Half a teaspoon wholegrian mustard

8 ounces of rocket

1 (4-ounce) chunk of good parmasan cheese

Method

  1. Prepare a charcoal grill with hot coals or turn a gas grill to medium-high heat. Brush the steaks lightly with olive oil and sprinkle both liberally with salt and pepper.
  2. Whisk together the olive oil, the lemon juice, mustard, 1 teaspoon salt and half a teaspoon pepper. Set aside.
  3. When the grill is hot, place the steaks on the it. Cook for 5 mins on each side on each side and then close the lid, making sure the vents are slightly opend.
  4. Cook for 5 to 15 mins more for medium-rare, depending on the heat of the coals, until the center of the steaks register 125 degrees on an instant-read thermometer. Remove to a plate, cover tightly with foil, and allow it to rest for 10 mins before slicing thickly.
  5. Toss the rocket in a large bowl with enough dressing to moisten; divide among 4 plates.Place half a steak on top of each salad.
  6. Shave the Parmesan onto each steak with a vegtable peeler, sprinkle with salt and serve hot.
